Pluot Jam with Ginger and Vanilla

The glorious pluot (3/5 plum and 2/5 apricot) is one of our favorite fruits.  We don't have any growing in the grove yet, but when we see it at the local farmer's market, we stock up. This jam captures the best of both fruits and the ginger and vanilla bean make it a perfect jam for toast on a chilly morning.

Ingredients: pluots (purple and yellow), sugar, lemon juice, ground ginger, vanilla bean

How to Use:
